New York Bagel & Bistro in Monmouth is expanding into Friday and Saturday evenings, beginning April 26-27. The restaurant will keep its normal hours from 6 a.m. to 3 p.m.; it will reopen from 8 p.m. to midnight on Friday and Saturdays.
Plans involve an expanded menu of desserts, but they also include bringing music, arts and culture to weekends in Polk County. The idea is to furnish a late-night coffeehouse to the college scene.
“We want a place where artists, musicians, and performers can create in a bistro environment,” said the bagel shop’s owner Will Telbany.
Born and raised in Egypt, Telbany lived in France and New York before coming to school in Oregon. He said as Western Oregon University attracts students throughout the world, Telbany hopes his bistro can reflect the diversity of the college community.
Since 2003, Telbany has made bagels in the traditional way, as he learned from bakers in New York and New Jersey.
“Bagels need to be boiled and baked,” Telbany said. “I don’t know of anyone else in Oregon making bagels like that anymore.”
And he now makes eclairs and meringue, as he experienced in the bistros of France.
When musicians asked to play at NY Bagel & Bistro on a Sunday morning, Telbany got the idea to open late on Friday and Saturday nights. He opened a few evenings, and the response was encouraging.
Friday the bistro will feature the music of Cepara, who has played the bars and bistros of Buenos Aires. Telbany also hopes to introduce belly dance in future weeks.
